The Hope Farm is a farm-to-table restaurant in Fairhope, Alabama, owned by Robert and Bentley Evans, whose bar builds garden-to-glass cocktails from herbs and fruit grown on the property, anise hyssop, pineapple sage, lemon verbena and mayhaw among them. The beverage book runs house classics, seasonal and after-dinner drinks, spirit flights and zero-proof, with a Rootimentary of beet-infused gin and ginger foam and a Capital Gains of brown-butter bourbon with candy cap mushroom demerara.
