Sorano is an Italian restaurant and cocktail bar on the first floor of Harrington Mansion on Ho Chi Minh Sarani, run by Manifest Hospitality around the idea of vivi il momento, the unhurried moment. Arched windows, a floral chandelier and a palette of pink, ivory and timber set the room, and a Pasta Fresca window shows the kneading and folding of fresh pasta. The bar keeps preservatives out of its drinks, measures sugar on a Brix scale and makes its own vermouth rosso, limoncello and allspice dram; the kitchen and bar fold Indian twists into Italian flavors, as in the Pesto Smash built on Bombay Sapphire. Wood-fired pizzas and pastas such as the quail agnolotti come from the kitchen.
