Saint is a boutique cocktail house on Rue de la Boucherie, in the middle of Vieux Nice and a short walk from the water. Founder Ruben O'Connell and general manager Thomas Shortt describe the outlook as Irish and American, rooted in balance, seasonality and a sense of place, and drawn from the jazz and cocktail rooms of New York. The menu runs in three collections: Saint Signatures, which lean on local ingredients; 7 Deadly Sins, seven drinks shaped by mood rather than theme; and The Unforgettables, classics gathered from places and people elsewhere and refined here. Rum, whiskey and tequila masterclasses run regularly. It is a room built for taking your time.
