Founded by Michito Kaneko, who won the Diageo Reserve World Class global bartender competition in 2015. The ground-floor room in the Iseya Building holds an extensive back bar and a replica copper pot still, and the bar works without a printed menu, building drinks to each guest's preferences and drawing on Japanese and regional ingredients. The bar holds No. 94 on Asia's 50 Best Bars 2026.
