Márcio Silva opened Guilhotina in Pinheiros in December 2016 with partners Rafael Berçot and Marcello Nazareth, and within a year it was a Tales of the Cocktail finalist for Best New International Cocktail Bar. A recent refurbishment left exposed brick, cathedral ceilings and a backlit counter among tropical plants. The drinks lean on Brazilian ingredients: Banho de Cheiro mixes gin, tonka bean syrup, rue and native cambuci fruit, and the alcohol-free Café da Tarde pairs cold brew with sweet potato water and spiced pineapple. A short food menu runs from crudos and small burgers to pancetta-charred octopus.
