Gimlet Nordic Cocktail Bar

Gimlet is a Nordic cocktail bar on Baznīcas iela in central Riga that builds its drinks from ingredients grown around the Baltic Sea, using quince and rhubarb in place of tropical fruit. The team makes its own kombuchas, cordials, syrups and shrubs, ferments some ingredients and uses slow frozen clear block ice. The room is kept ascetic and minimal in a Nordic style, and the menu changes with the seasons.
