Phoenix, Arizona
Coabana brings a Cuban-inspired cocktail program to CityScape in downtown Phoenix. The idea traces back to a trip to Miami's Little Havana by Kyla Hein, its operating owner and beverage director, whose team also runs the Pigtails speakeasy next door. Where Pigtails stays dark, this room goes bright and tropical, with pink and yellow tile and a walk-up service window, and holds around 50 guests. The drinks lean on rum: a riff on the Cuba Libre, a frozen Miami Vice and a section that lets guests build their own mojito. The kitchen sends out street-food tapas such as croquettes, plantains and Cubano sandwiches.
