The bar and Cocktail Lab inside Botanist at the Fairmont Pacific Rim, where creative beverage director Grant Sceney builds seasonal drinks around Pacific Northwest ingredients, including foraged sea asparagus and kombu, as in the Marine Martini. The venue spans four botanical-themed spaces: the bar and lab, a garden, a dining room and a library room.
