Bekeb opened in 2019 inside Hotel Live Aqua in San Miguel de Allende, founded by the mixologist Fabiola Padilla. The name comes from the Tzotzil word bek, meaning seed, and the list is built on agave distillates, plants, flowers and roots, drawing on pre-Hispanic ingredients and ancestral processes such as fermentation and distillation.
