The menu unfolds in four chapters — Classics, Sours, Alternatini, and Stirred — each reimagining a familiar style of cocktail through the lens of global collaboration and cultural exchange.
At the heart of Wynn Palace, Wing Lei Bar has become a crossroads where East meets West, recently hosting Asia’s 50 Best Bars 2025. With UNITY, it reaffirms its place as a destination where global ideas and world-class cocktails converge.

Classics Reimagined
The Classics chapter opens the UNITY Cocktail Menu with drinks that honor timeless recipes while reframing them through global encounters. These cocktails are rooted in the familiar, but each carries the imprint of a conversation, a friendship, or a cultural exchange that changed its course. The result is a collection of drinks that feel instantly recognizable yet refreshingly new — the starting point of a dialogue that bridges tradition and innovation.
Tommy’s Holiday
More than a riff on Julio Bermejo’s iconic Tommy’s Margarita, this cocktail is an evolving tribute. Each month it takes on flavors from a different region, becoming a margarita that travels the world while staying rooted in its classic form.

Not Quite a Penicillin
Inspired by Sam Ross’s modern classic, this version bends the smoky template toward Cantonese traditions. Oyster sauce and sand ginger bring umami depth and spice, creating a cocktail that balances East and West in a single sip.

Peanut Pistol
A bold and playful riff on the Revolver. Bourbon, coffee liqueur, and peanut butter come together with an Americana swagger, born from nights with the team at Honky Tonks Tavern.

Sours with a Story
Sours have always been a universal form, found in every culture where citrus and spirits meet. In UNITY, the Sours chapter becomes a personal diary of travels and collaborations, tracing flavors from Manchester to Singapore to Seoul. Each drink blends memory with place, reminding us that sourness is both a shared language and a canvas for individuality. These are cocktails that connect the emotional with the flavorful, nostalgic yet inventive.
Manchester Tart
A nostalgic ode to Lloyd’s schooldays in northwest England, when afternoons ended with custard and raspberry jam. Reinterpreted with coconut gin and custard-infused coconut, it blends memory with modern craftsmanship.

Kaya
A Singapore-inspired gimlet created with Cat Bite Club, this drink blends sake, mezcal, and kaya jam. The result is both familiar and inventive, capturing the essence of Southeast Asia in a refreshing twist on a classic.

Dak-Galbi
A fiery sour inspired by spirited nights with Pine & Co in Seoul. Chili mezcal, banana-infused makgeolli, and drunken chicken marinade make this cocktail smoky, spicy, and bursting with the convivial energy of a Korean table.
