Introducing KA-WA SA-WA

A velvet bourbon and fresh sake blend, enriched with concentrated cold brew, and topped off with a cherry cola twist. This coffee cocktail sour boasts a dense, creamy body, making it an exquisite late afternoon aperitif. The name reflects its main ingredient (coffee) and its sour cocktail category.

Crafted with Blanton’s Original bourbon, revered for its silky texture, rich corn body, and notes of caramel, vanilla, dried stone fruit, pralines, and even baked hazelnuts. Ume No Yado Yuzushu sake adds acidity and freshness, embodying the zest of citrus fruits like tangerines, limes, and pomelo, enhancing the juicy and fruity character of Ethiopian coffees.

The concentrated cold brew, prepared at a 1:10 ratio over 24 hours, forms the cocktail’s base and length. Cherry cola introduces a stone fruit flavor often associated with coffee. Spices in the cola add complexity, while a sugar syrup enhances the sweetness and flavors of all ingredients.

Upon mixing with nitrogen, the cocktail achieves a dense, creamy body and a foam reminiscent of a sour category cocktail, served in a Kimura Seine glass over a block of ice and garnished with a mint sprig dusted with powdered sugar. Experience the essence of craftsmanship in every sip.
