Advocatuur, the striking new bar inside Rosewood Amsterdam, is set to redefine the luxury hotel bar experience. Housed in the city’s former Palace of Justice, the space fuses heritage with modern rebellion—echoing Amsterdam’s dynamic spirit through design, cocktails, music, and cuisine.
Led by Yann Bouvignies, formerly of Scarfes Bar in London, the concept is brought to life with interiors by Sagrada. Guests enter through a canal-side door into three cozy, distinct spaces, each designed to embody gezelligheid, the uniquely Dutch sense of comfort and conviviality.
At its heart is a speakeasy-style distillery producing the house jenever, PrØvo. Created with Alex Davies of Kyoto Distillery, the spirit pays tribute to the 1960s Provo counterculture movement. Using both traditional and modern distilling techniques, it highlights botanicals like tulsi, milk oolong, grapefruit, and ginger.
Cocktails with a Cause
The debut cocktail menu, The Will Of The People, juxtaposes legal formality with creative freedom. Menu design takes cues from prison graffiti and courtroom documents, while drinks challenge conventions with bold ingredients and techniques.
Highlights include Order + Disorder (Bacardi Carta Blanca, Matcha Orgeat, Aloe Vera, Clarified Guanabana) and Will of the People (Michter’s Bourbon, Palo Santo, St-Germain, CO₂). Guests can also explore “baby serves,” including modern riffs on the Martinez, Alexander, and Pornstar Martini.
The Kopstuk offers a clever twist on the Dutch kopstoot, pairing a beer and jenever with a quail egg seasoned with botanical-infused salt. Non-alcoholic options like the Botaniq Spritz and Tuen Highball bring the same level of craft and complexity to sober sipping.
Flavors, Sound, and Atmosphere
From the open kitchen come Indian-inspired small plates with a local twist, all cooked in twin tandoor ovens. Dishes like Raj Kachori, Baked Samosas, Lamb Kofta, and Dutch Cheese Bites complement the drinks with bold, satisfying flavors.
The soundtrack blends jazz-hop, neo-soul, and future funk with live performances that evolve throughout the evening—transforming the atmosphere from laid-back to electric.
