Sydney’s cocktail scene is about to get a lot more bitter—and bolder. Opening Saturday, May 3, 2025, Herbs Taverne is the latest bar from MUCHO Group, the creative minds behind Cantina OK!, Bar Planet, Centro 86, and Tio’s Cerveceria. Their newest venture lands on Clarence Street with a laser-sharp focus: a Negroni bar for lovers of bold aperitifs and digestifs.

Herbs Taverne promises an immersive celebration of bitter drinks, anchored by the iconic Negroni and an expertly curated lineup of rare amaros from around the world. But this isn’t your traditional Italian aperitivo spot—Herbs filters the European canon through Sydney’s global pantry, drawing unexpected flavor inspiration from Polish delis, Chinese grocers, and beyond.

The bar’s 12-drink menu includes:

  • Three inventive Negroni riffs
  • Three house aperitifs
  • Three blended digestifs
  • Three original cocktails
    Plus a rotating monthly spritz special.

“Each drink is built to be purely delicious but also surprising,” says Jeremy Blackmore, Creative Director at MUCHO Group. “We’re pairing amaro with parsley, gentian with passionfruit, even Calvados and Żubrówka. These combinations push boundaries and go beyond the expected.”

Herbs will be open seven nights a week from 4pm to 2am, serving Sydney’s late-night crowd a distinctly psychedelic spin on tradition, wrapped in the cozy feel of a bar that feels timeless—yet entirely modern.
