One of the most famous blue cocktails, Blue Bird, was created by Billy Tarling at London’s Café Royal in 1937, during the first wave of blue cocktails. Today, modern bars are reviving and reinventing these visually striking drinks:
- Unseen Milan serves Power Juice, originally made with kombucha, tequila, fig, and blue food coloring, now updated with raspberry vodka, verjus, and blue curaçao.
- Dante NYC offers Azzurro Negroni, a twist on the classic Negroni using Luxardo Bitter Bianco and blue curaçao instead of Campari.
