Martina Bonci, the bar manager at Gucci Giardino, has led this establishment to become one of the best bars in Italy in a short time. In this exclusive interview, she shares insights about the bar’s success, her journey in mixology, and what makes Gucci Giardino a unique destination for cocktail enthusiasts.

What do you think is the main reason behind Gucci Giardino’s success?

We have a young, friendly, and fun team. I believe that as soon as guests enter the bar, they feel welcomed and understand that we want to take care of them. Enthusiasts of mixology and ‘ordinary’ guests looking for good coffee, delicious breakfast, or a unique business lunch all have a memorable experience with us.

How did you get into bartending?

I was born into a family that loves food and drink. My grandmother used to give me sips of red wine as a child… until my mother found out! During my career as a professional volleyball player and while studying at university, I started working in a bar and fell in love with it.

Can you tell us more about the concept of Gucci Giardino?

We are the first Gucci bar in the world, opened in February 2022. It’s a cocktail bar with an all-day café located on Piazza della Signoria, one of the most beautiful squares in the historic center of Florence.

What inspired the creation of your cocktail menu?

Our latest drink menu was actually inspired by my team: each cocktail is dedicated to one of them.

What is the biggest lesson you have learned in your career?

You can learn something every day from the people around you – other bartenders, guests, or team members.

What drink would you recommend to a guest visiting your bar for the first time?

Try Mémoire di Negroni, my signature cocktail, and Queen Bee, a fresh tribute to the concept of the beehive.

What has been the most significant experience of your bar career so far?

The opportunity to work with masters from our industry like Simone Caporale from Sips, Monica Berg and Alex Kratena from Tayer + Elementary, and Salvatore Calabrese from The Donovan Bar. It is a great privilege to meet these people and convince them to come for a guest shift at our bar.

What are your favorite places in Florence for a good drink?

I love Atrium Bar at the Four Seasons Hotel, Atto at Palazzo Portinari, Lovecraft, a whisky-focused bar, perfect for a stop on the way home. And Locale for a really fun night!

What are your favorite bars in Italy?

It’s hard to choose! I love the speakeasy 1930 in Milan, Drink Kong and Freni e Frizioni in Rome, and L’Antiquario in Naples.

What are your work plans for the near future?

To continue the great work with my team and ensure that our guests are as satisfied as possible every day.
